What is Nantan Kori Jikomi?

 
Kameman Shuzo is located on the border of Kagoshima Prefecture, a place that is considered the geographical limit for sake production made in its natural condition. In order to cope with the global warming that is becoming more severe every year, Kameman brews their Sake with their unique method called "Nantan Kori Jikomi" (Ice Brewing in the Southernmost, or Southern Style Ice Brewing).
"By adding a massive amount of ice to the tank containing the brewing water and steamed rice, the temperature is set to a level suitable for sake brewing. It varies depending on the temperature and daily humidity, but in some cases, as much as 300 kg of ice is added to a single tank," says Executive Director Takeda. This demonstrates the wisdom and ingenuity of a dedicated sake brewery that insists on natural brewing without relying on air conditioning!
